21-Day Vegan Challenge Meal Plan: Week Two + Trader Joe’s Haul (Video)

I really shocked myself with how easy this challenge is actually going! I began to get more into it as the first week went by.  Shopping for week two was a breeze and I’m even more excited about the meals I’ll be chefin’ up this week.  To see my full grocery haul for week two, check out my video. This week I went shopping at Trader Joe’s. I was a bit disappointed that they did not have some of the staples that I needed, such as, non-dairy yogurt. Like how how does Trader’s not have non-dairy yogurt?  I had to make a pit stop to Wegman’s to pick up things that were’nt fulfilled at Trader’s.  However, the joke was on me because I was able to pick up the Vegetti spiralizer machine that I’ve been wanting for only $20. I can’t wait to make these zucchini noodles. I’m also excited about making a batch of vegan sweet potato cinnamon rolls. If it’s one thing that I miss, it’s indulging in desserts on site!  Luckily, I crave natural sugars such as fruits, but once and a while I want a guilt-free soft cookie or brownie. I can’t wait to tell you all more in detail about how some of the benefits of the challenge are starting to set in. But, for now just know that I feel amazing and I haven’t looked back! Also, my mind has been exposed to so much as I educate myself throughout this journey and begin to learn more about myself.  I’m just completing week one so I can only imagine how I will feel and look on the last day. Here’s to week two!
